FSHN 160 - Nutrition and the Preschool Child

Sifting through the ever-increasing amounts of information, misinformation, claims, and counterclaims about nutrition is a challenge for anyone concerned with the health and diet of young children. This course provides a basic knowledge of nutrition as well as how to apply these principles to the preschool child.

Topics covered include food habits and preferences, the importance of vitamins and minerals, menu planning, choosing the right snack foods, allergies, vegetarian diets, and the effects of diet on behavior.

This course has print-based exams that require a proctor. A Proctor Agreement Form will be required. ProctorU is not available for this course.

Pat Kendall joined Colorado State University's Department of Food Science and Human Nutrtion as a Cooperative Extension specialistist in 1976. Dr. Kendall received her B.S. in Home Economics Education and M.S. in Foods and Nutrition from Kansas State University. Her Ph.D. is in Nutrition Education from Colorado State.

As an Extension Specialist, she worked with extension agents, teachers, graduate students and nutrition and agricultural professionals across Colorado in development, implementing and evaluating programs in the areas of foods, nutrition and food safety.

From 1997-2000, Pat served as Associate Head, Interim Head, and Graduate Programs Coordinator for the Department of Food Science and Human Nutrition

She is the past president of the Society for Nutrition Education, the Colorado Dietetic Association and Simply Colorado, Inc. She has received numerous awards in recognition of her work, including the K-State Distinguished Alumnus Research Award and Outstanding Colorado Dietician of the Year. In 2009, Dr. Kendall became the Associate Dean for research for the College of Applied Human Sciences.
